Hot Tamales


(They take time to make but are so delicious)

Ingredients:
3 lbs. of turkey or 1 1/2 lbs. of beef and 1 1/2 pounds of pork)
2 T. of red pepper (cayenne)
4 T. garlic powder
1/2 t. black pepper
5 T. salt
1 cup of corn meal (yellow) for mix
2 oz. chili powder
I can chili
3 cans of tomato sauce (small)
4 large onions
3 t. cumin
2 sticks of chili
4 qts. boiling water
1 lb. corn meal (to roll tamales in)
parchment papers

Instructions:
1. Mix in large bowl: meat, peppers, salt, garlic powder, 1 cup of corn meal, half of the chili powder (1 oz.), 2 cans of tomato sauce, and cumin.
2. Quarter the onions -- put into blender with 1/2 cup water and puree. Add to mixture in bowl.
3. Wet the papers in a small bowl of water.
4. Take about 1 T. of meat mixture and roll in corn meal; roll tightly in a wet paper and place in a very large pot (several layers are okay).
5. Pour the remaining chili powder, sprinkle with cumin and a little cayenne. Pour 1 can tomato sauce over them.Spread the can of chili over it; break up the chili sticks and spread over them. Then, pour boiling water over it and cook on a very low fire for 2 hours. Do not bake in the oven. Makes 10-12 dozen.

Sangria


Ingredients:
1 1/2 L. red wine (Cabernet Sauvignon)
1 cup of sugar
1 large lemon (sliced)
1 large orange (sliced)
1 large apple (cut thinly)
3-4 oz. brandy
soda water

Instructions:
1. Mix wine, sugar, and fruit -- let it sit in the fridge for 18-24 hours -- it will become thick and syrupy.
2. Before serving, stir in the brandy and cut with the soda water until it is like a wine consistency.
